How you will make an impact:
You will be responsible for preparing food and serving customers in accordance with applicable local standards, guidelines and regulations. This includes all prep and assistance required for all stations. This is a 32 hours a week. Monday to Thursday
As a Prep Cook, you will:
- Obtain daily production schedule and preparation requirements from the Chef
- Label and stock all ingredients on shelves so they can be organized and easily accessible
- Measure ingredients and seasonings to be used in cooking
- Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
- Undertake basic cooking duties such as reducing sauces, parboiling food etc.
- Prepare simple dishes such as salads, entrees etc.
- Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash etc.
- Ensure all food and other items are stored properly
- Comply with nutrition and sanitation guidelines
- Perform other kitchen duties as assigned.
Other Duties required are as follows.
- Represents Compass Group Canada in a courteous, efficient, and friendly manner in all customer and employee interactions.
- Required to handle tasks in other areas of the kitchen in addition to their stations. Additional Line Cook job duties and responsibilities.
- Adhere to menu specifications and standardized recipes, assembling ingredients for the quantities required.

- Physical stamina and the ability to stand for extended periods of time when cooking and preparing food
- Ability to remain calm under pressure and deal with unexpected situations
- Changing and Filtering of oil at the Grill station, for the grill cooks on a weekly basis.
- Responsible for opening and closing checklist, as well as necessary reports
- Prepare food items such as meats, vegetables, and cheeses using multiple pieces of equipment, including grill, oven, fryers and flattops
- Portion quantities for bulk service and plate food for customers, employees and visitors.
- Assist with special functions and catering as required.
- Use batch cooking techniques and follow recipes.
- Maintain established food rotation protocols in order to minimize spoilage and waste.
- Ensure safe and sanitary practices are followed, in accordance with company and facility policies, including all work spaces.
- Required to perform cleaning duties. Responsible for the cleaning of own Station.
- Ensure that all food served exceeds standards for quality control, at the proper temperature and at the correct time.
- Maintain all related work areas and equipment in a clean and sanitary condition, including at the end of the shift.
- Maintain all HSQA records, such as production logs, hot and cold temp logs, cooling logs, receiving logs, cleaning logs as per job requirements
- Follow principles of sanitation and safety in handling food and equipment.
- Reports damaged and/or inoperable equipment and fixtures to designated person(s).
- Performs other work-related duties as assigned.
- Follows Manager/Chef’s direction as required
About you:
- Previous experience as a prep cook required
- Certificate from a recognized cooking school
- You must have a valid Food Handler Certificate or provincial equivalent
- Knowledge of health and safety rules in a kitchen
- Able to operate cutting tools and kitchen utensils
- A team player with effective communication skills
- Patient with an ability to stay positive under pressure
- Training from a culinary school will be an asset
- Physical ability to carry out the duties of the position
