The Kitchen Manager (KM) is the senior operational leader for all back-of-house (BOH) functions at Tundra Grill & Concessions. Reporting to the General Manager Tundra Grill & Concessions this role assists the Jr. Assistant Manager and Assistant Manager, Tundra Grill, to provide daily leadership to the kitchen team, including Chef de Parties, Cooks, and Food Service Team Members. The Kitchen Manager ensures high-quality food preparation, consistent execution of culinary standards, strong adherence to Manitoba Health regulations, and smooth BOH operations across multiple venues.
The Kitchen Manager works collaboratively with the General Manager Tundra Grill to uphold menu standards, manage inventory and ordering, maintain equipment, and ensure efficient workflows. This role requires strong leadership, hands-on kitchen experience, and the ability to foster a positive, inclusive, and safe work environment aligned with Park Hospitality values.

Leadership & Team Oversight · Prepare food for service (e.g. chopping vegetables, butchering meat, preparing sauces). · Provide daily leadership and direction to all BOH staff, including Chef de Partie and line cooks. · Lead pre-shift kitchen meetings; communicate menus, shortages, specials, and expectations. · Support hiring, onboarding, and training of new BOH employees. · Promote a positive and inclusive kitchen culture, reinforcing Park Hospitality’s values. · Provide input for scheduling, performance management, and staff development. |

Culinary Execution · Oversee and participate in the preparation, production, and plating of menu items across all Tundra Grill & Concessions BOH operations. · Ensure food consistency in flavour, presentation, portioning, and quality. · Maintain and enforce recipe standards, preparation methods, and plating guidelines in collaboration with the Executive Chef & General Manager, Tundra Grill. · Support execution during peak hours, acting as expeditor when required. |

Kitchen Operations · Maintain all BOH areas at the highest level of cleanliness, sanitation, and organization. · Ensure compliance with Manitoba Health food safety regulations at all times. · Oversee storage, rotation, and labeling of all food products. · Monitor and maintain kitchen equipment; submit maintenance requests as required. · Participate in seasonal setup and shutdown of kitchen operations. |

Health & Safety Compliance · Ensure safe work practices are consistently followed by all BOH staff. · Maintain HSAQ compliance. · Actively engage in Park Hospitality’s safety and environmental sustainability initiatives. · Participate in investigations, hazard assessments, and safety audits as required. |

General Duties · Adhere and comply with all Park Hospitality policies, safety regulations and safe work practices that will ensure a safe work environment. · Maintain a professional image while working and provide extraordinary experiences to our park visitors while performing daily work activities. · Demonstrate the ability to establish and maintain positive relationships with co-workers, volunteers, and visitors. · Demonstrate a commitment to the principles of equity and diversity, and proven ability to work effectively with a diverse population. · Perform other related duties and responsibilities as required. |
