Job Summary
How you will make an impact:
You will be responsible for running the pastry operations by creating, planning and supervising the daily production of top-quality pastries, desserts and baked goods
As a Pastry Chef de Partie, you will:
- Supervise the daily production and distribution of all pastries, desserts and baked goods
- Ensure recipes and standards are followed, food costs are controlled, and appropriate quantity is prepared based on established production needs
- Ensure proper food handling, presentation, portion control and maintenance of proper serving temperatures
- Monitor and control the maintenance and sanitation of the pastry kitchen and equipment to ensure a work environment that meets/exceeds federal, provincial and corporate standards and regulations
- Supervise hourly kitchen/pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate
- Help plan and implement seasonal menus
- Order and maintain pastry supplies and products to ensure appropriate inventory levels
About you:
- Proven experience as Pastry Chef, baker or in a relevant role
- You must have a valid Food Handler Certificate or provincial equivalent
- Post-secondary education in culinary or related studies
- Great attention to detail and creativity
- Great organization and leadership skills
- In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
- Certificate in culinary arts, pastry-making, baking or in a relevant field
